Protein-Packed Energy Balls for Picky Eaters
Edwena shares on Instagram: "Forming positive memories with your toddler around a disliked food away from the dinner table can be a great way to turn around picky eating. And I believe creating in the kitchen is one of the best ways to do this! We've been working on learning to like pumpkin over the last couple weeks, and this activity was super fun for my kids and I do to together.
Creating in the kitchen not only gives your child a sense of pride and accomplishment....but it creates a positive experience around food! This is one of the many strategies I teach in my Feeding Toddlers online course! Think about it...we've had years and years and years of experience with so many types of food. Your child may have not had enough experience with a food yet to get them to a point where they willingly want to eat it. And even more than that...usually for picky eaters...most of those experiences haven't been positive ones (always hearing "try this" "one more bite" etc.). So the first step is creating some positive, fun, no-pressure food experiences and kicking those not-so-great memories to the curb.
This recipe is an easy one and is perfect for those kids learning to like pumpkin! It has a mild pumpkin flavour mixed with a hint of vanilla, and because it's made with @healthyheight shake mix, it's got tons of nutrients to help your little one grow while still learning to like the whole food versions of many foods!"
- 2 scoops Healthy Height vanilla
- 2 cups rolled oats
- 1/2 cup canned pumpkin puree
- 1/4 cup almond/peanut butter
- 1/4 cup chia seeds
- 1/4 cup pumpkin seeds
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/4 cup maple syrup
- Pinch of salt
- Optional: pretzels & chocolate chips
- Mix all ingredients together in a food processor
- Form into balls (and decorate as a Jack-O-Lantern if you'd like!)
- Freeze until firm
- Thaw for 5 minutes before serving
