Healthy "Mix-In" Muffins for Kids

Ingredients:
- 1-3/4 cups old fashioned oats
- 3/4 cup Healthy Height Plain
- 1 cup plain low fat Greek yogurt
- 2 eggs + 1 egg white
- 1/2 cup honey
- 2 tsp baking powder
- 1 tsp baking soda
- 2 Tbsp ground flax seed
- 1 tsp vanilla
- 2-3 ripe bananas
Optional:
Mix-ins of choice (we like semi-sweet chocolate chips and blueberries! You can also try strawberry pieces, shredded coconut, white chocolate chips, etc.)
Directions:
- Place oats in food processor and pulse to break up oats (Tip: do not overprocess - it should not be flour consistency)
- Add all remaining ingredients into food processor and process until completely blended
- Move to a bowl and add mix-ins
- Divide batter between muffin/cupcake liners
- Cook at 350 degrees F for about 20 to 24 minutes (Note: they do not fluff up too much)
